- Oil for shallow frying
- 2 tbsp butter/ ghee for cooking optional
- 3 tbsp oil for cooking
- For rice:
- 2 cups basmati rice
- 3-4 finely chopped onions 🧅
- 2 finely chopped tomatoes 🍅
- 1 tbsp ginger garlic paste 🧄
- 2 bay leaves
- 2 leafs of star anise
- 1 tsp cumin seeds
- 11/2 tbsp kabsa masala
- 2 tbsp finely chopped coriander leaves 🌿
- Salt to taste 🧂
- 1 tbsp sliced almonds fried
- 2 tbsp fried onions 🧅
Instructions to make to make Fish kabsa 🐠🍅🌿
- Wash and clean fish pieces, pat dry with kitchen towel and keep aside. Soak rice and keep aside.add lemon juice 🍋 on the fish pieces and keep it for 15 mins.wash again and pat dry with kitchen towel and marinade.
- Marinade the fish 🐠: in a bowl 🥣 add yogurt, ginger garlic paste 🧄, salt 🧂, kashmiri red chillies powder 🌶️, coriander & cumin powder, turmeric powder,black pepper powder,green chillies paste, kabsa masala and mix well, spread on fish pieces 🐟 cover and keep it for 30mins.
- Shallow frying the pieces and keep aside, keep marinade mixture separate later add in the gravy.Heat oil, add ghee/ butter, add cumin seeds, bay leaf,star anise cook for 1 min, add finely chopped onions 🧅, cook until golden, add ginger garlic paste 🧄 mix well.
- Add finely chopped tomatoes, salt 🍅 cook until mushy,add turmeric powder, marinade mixture, coriander & cumin powder, little finely chopped coriander leaves 🌿, kabsa masala and mix, cook until oil comes out. Add soaked rice and mix well, add water mix gently, let it boil, when rice is tender and soft, remove from flame.
- To assemble: add cooked rice in serving dish, arrange fried fish pieces on top, garnish with fried onions and fried almonds and serve hot. Serve with simple leaf parsley salad.
- For leaf 🍂 parsley salad: cut 2-3 onions into round, finely chopped leaf parsley mix gently, add salt 🧂, black pepper powder, white vinegar 1 tbsp mix and serve with fish kabsa,If desired.
