  4. 2 Green Cardamom

  12. 500 g Mutton
  13. 1 Tomato
  14. 1/2 cup Curd

  17. 2 Cloves
  18. 1 Cinnamon
  19. 2 tbsp Garlic paste
  20. 1 tbsp Ginger paste
  21. 2 tbsp Oil
  22. 1 tsp Salt
  23. 1/2 tsp Turmeric powder
  24. 1and 1/2 tsp Red Chili powder
  25. 1 tsp Garam masala powder
  26. 1 tbsp Biryani masala

  28. 2 tbsp Milk
  29. 1/2 cup Fried Onion
  30. 2 tbsp Ghee
  31. 2 tbsp finely chopped Coriander leaves
  32. 6-8 Saffron strands
  33. 1 tsp Kewda essence
  34. 1 tsp Rose essence
  35. 1 pinch Yellow food colour
  36. 2 Tomatoes, sliced

Steps to make to make Hydrabadi Mutton Biryani

  1. Heat oil in a wok and fry the thinly sliced onion.
  2. Marinate mutton pieces with fried onion, ginger garlic paste, turmeric powder, chili powder, garam masala powder, curd, and 1/2 tsp salt.
  3. Heat the remaining oil from the fried onion in a pressure cooker and put whole garam masalas.
  4. Add chopped tomato and cook for a minute.
  5. Add marinated meat, biryani masala, and salt.
  6. Mix well, close the lid and cook for 1-2 whistles.
  7. For rice, boil water in a big pan and add oil, whole masalas, and lemon juice.
  8. Add washed rice and cook till the rice is 70% done.
  9. Drain the water from the rice and keep it aside for cooling.
  10. Heat ghee in a thick-bottomed pan and put some gravy from the meat.
  11. Put half of the cooked rice in the pan.
  12. Sprinkle some fried onion, and coriander leaves, and then pour cooked mutton on it.
  13. Put the remaining cooked rice on it to make a layer and sprinkle fried onions, coriander leaves, green chilies, and sliced tomatoes.
  14. Now Pour saffron milk, yellow colour, kewda, and rose essence, cover properly and cook on low heat for 10 minutes.
  15. After that mix well and serve hot mutton biryani with raita and salad.
