- 1 kg Chicken with bones
- 1 Tbsp ginger paste
- 1 Tbsp garlic paste
- As Required Lightly roast and make a powder of the following

- 1/2 tsp cumin seeds
- 1/2 tsp star anise
- 4-5 whole red chillies
- 1/2 tsp black peppercorns
- 1/2 cup grated coconut
- 2-3 cloves
- 1/2 cinnamon stick
- 1/4 tsp turmeric powder
- 1 Tbsp red chilli powder
- 1 cup beaten yogurt
- 750 gms Basmati Rice
- 2 green cardamoms
- 3-4 cloves
- 1 cinnamon stick
- 1 bay leaf
- 4-5 medium sized potatoes
- 3-4 onions finely sliced
- 7-8 cashew nuts
- 3-4 onions chopped fine
- 3-4 cloves

- 1/2 tsp cumin seeds
- 1 Tbsp coriander seeds
- 3-4 whole red chillies
- 5-6 cashew nuts
- 5-6 almonds
- 10-12 raisins
- 1/2 tsp saffron soaked in 1/3 cup milk
- 3 Tbsp ghee
- As Required Oil
- As Per Taste Salt
Instructions to make to make Kolhapuri Biryani
- Marinate the chicken - Wash the chicken and add half of the ginger and garlic paste, all powdered spices and turmeric powder, red chili powder, and beaten yogurt. Keep it marinated overnight
- Wash and soak the rice for 20 mins, drain and in a heavy bottomed pan boil water, when boiling add the rice and salt and boil until half did, drain. In a pan heat 1 Tbsp ghee and add cinnamon stick, green cardamoms, cloves, and bay leaf, stir and add the rice, cook for 2 mins and set aside spread out on a plate
- Boil the potatoes until half done and peel and set aside
- Heat 1.5 cup oil in a wok and add sliced onions, cook until golden and set aside. Add cashew nuts and fry until golden, set aside. Add chopped onions, and cook until pink in colour, add cloves, cinnamon stick, cumin seeds, coriander seeds, whole red chilies, cashew nuts, almonds, and raisins. Cook for 2 mins, cool and make a paste in a blender.
- Heat 1/2 cup oil and add the paste, cook for 2-3 mins, add the marinated chicken and on medium flame cook for 7-8 mins. Cook covered for 5-6 mins and cook the chicken until half did. Make sure that 1 cup of gravy is there and set aside
- Assemble - in a heavy-bottomed pan smear oil, add potatoes first, add half of the rice, then half of the chicken with gravy, then fried sliced onions, fried cashew nuts, then rice again, then chicken, and end with rice again. Make holes in the pan with a wooden spoon and pour the saffron-infused milk, close the holes with rice and smoothen
- Add 2 Tbsp ghee and close the pan. Place on a Preheat tawa and cook for 30 mins on low flame.
- Plate and Serve hot
