  7. 150 gm paneer
  8. 200 gm cauliflower
  9. 1 lemon
  10. leaves Coriander
  11. 3 green cardamom
  12. 6 cloves
  13. 6 black pepper
  14. 2 inch cinnamon
  15. 4-5 bay leaves
  16. 1 tbsp red chilli powder
  17. 1/2 tbsp turmeric powder
  18. 1 tbsp coriander powder
  19. 3-4 tbsp biryani masala
  20. 1 tsp cumin seeds
  21. 1 pinch asafoetida
  22. 12-15 cashew nuts
  23. 1 cup beaten curd
  24. 1/2 cup milk
  25. 2 tbsp rose water
  26. 1 cup pure ghee
  27. to taste Salt

Steps to make to make Hyderabadi veg dum Biryani😋😍

  1. Rinse basmati rice in running water till the water runs clear of starch. Soak the rice in water for 30 minutes. Take out the rice and out them in cooker with 1 green cardamom, 2 black pepper, 2 cloves, 1/2 inch cinnamon, 1-2 bay leaf and some salt and boil them in cooker and close the flame when the first whistle is about to come. The rice has to be 75% or ¾ᵗʰ cooked. The grains should have a slight bite to them when cooked. The rice should not be fully cooked but almost cooked.
  2. When the rice is being prepared, let's prep the other ingredients. Rinse, peel and chop the veggies. Cut half onion with the length. Finely chop or crush ginger.
  3. Heat 3-4 tbsp ghee in pan and add finely chopped onion. Fry them till it become golden brown. Take out the onion and fry cashew nuts till they become light brown in colour. Take out the cashew nuts and fry remaining big chopped onion and fry them till they become brown and crispy.
  4. In a pan, heat 3 tbsp ghee. Add the following spices – cumin seeds, asafoetida, tej patta, green cardamoms, cloves, black pepper, cinnamon, red chilli powder, turmeric powder, coriander powder. Now add the sliced tomatoes. Stir and sauté them on a low to medium flame.
  5. Now add the chopped Veggies. Saute them for 5 minutes now add Biryani masala and cover the pan and cook for 10-15 minutes, stir occasionally. Then add some water and Salt and cook for 5 minutes till the required consistent is achieved.
  6. Now take a small pan and heat milk. Don't boil. Let it cool for 2 minutes and add curd and rose water in it.
  7. Now we'll layer and make veg dum biryani.
    In a thick bottomed pan or cooker, first apply ghee in the bottom, and add 1/3 rice. Now layer half of the veg biryani gravy. Then layer 1/3 of the rice again and apply 1/2 mixture of curd, 1/2 fried onion, and some cashew nuts. Again layer with rest of the rice and remaining curd mixture, onion, cashew nuts and finally remaining gravy. Sprinkle chopped coriander leaves.
  8. Dum cooking veg biryani.
    Now seal and secure the pot with aluminium foil. Then cover with a lid. You can also seal the handi with a moist cotton cloth and then cover with the lid.Take a tava/griddle and heat it on medium flame.When the tawa become hot, then lower the flame. Keep the sealed veg biryani cooker/handi on the tava. Keep the flame to the lowest and cook for 25-30 minutes. You can also dum cook veg biryani for the first 15 minutes on direct low flame and then for the last 10 minutes.
  9. Now dum veg Biryani in Hyderabad style is ready. Garnish with crispy onion, coriander leaves, cucumber and serve with mix veg (onion, tomato, cucumber) raita.
