  8. 1 cup boiled and crushed soya chunks

  10. 4 tbsp Fresh coriander leaves
  11. 3-4 green cardamom
  12. 2 inch cinnamon
  13. 4-5 cloves
  14. 2 bay leaf
  15. 1 tsp Red chilli powder
  16. 1 tsp coriander powder
  17. 1/2 tsp turmeric powder
  18. 3-4 tbsp Biryani masala
  19. 1 tsp Cumin seeds
  20. 1 tbsp beaten curd
  21. 12-15 cashews nuts
  22. 1/2 cup milk
  23. 1/2 tsp rose water
  24. 1 cup pure ghee
  25. to taste Salt

Steps to make to make Cinnamon flavoured Veg kheema Dum Biryani

  1. Rinse basmati rice in running water till the water runs clear of starch. Soak the rice in water for 30 minutes. Take out the rice and out them in cooker with 1 green cardamom, 2 black pepper, 2 cloves, 1/2 inch cinnamon, 1-2 bay leaf and some salt and boil them in cooker and close the flame when the first whistle is about to come. The rice has to be 75% or ¾ᵗʰ cooked. The grains should have a slight bite to them when cooked. The rice should not be fully cooked but almost cooked.

  4. In a pan, heat 3 tbsp ghee. Add the following spices – cumin seeds, asafoetida, tej patta, green cardamoms, cloves, black pepper, cinnamon, red chilli powder, turmeric powder, coriander powder. Now add the sliced tomatoes. Stir and sauté them on a low to medium flame.
  5. Now add the chopped Veggies, chrushed soya chunks (kheema), copped paneer. Saute them for 5 minutes now add Biryani masala and cover the pan and cook for 10-15 minutes, stir occasionally. Then add some water and Salt and cook for 5 minutes till the required consistent is achieved. Veg kheema gravy is ready.
  6. Now take a small pan and heat milk. Don't boil. Let it cool for 2 minutes and add curd and rose water in it.
  7. Now we'll layer and make veg dum biryani.
    In a thick bottomed pan or cooker, first apply ghee in the bottom, and add 1/3 rice. Now layer half of the veg biryani gravy. Then layer 1/3 of the rice again and apply 1/2 mixture of curd, 1/2 fried onion, and some cashew nuts. Again layer with rest of the rice and remaining curd mixture, onion, cashew nuts and finally remaining gravy. Sprinkle chopped coriander leaves.
  8. Dum cooking veg biryani.
    Now seal and secure the pot with aluminium foil. Then cover with a lid. You can also seal the handi with a moist cotton cloth and then cover with the lid.Take a tawa/griddle and heat it on medium flame.When the tawa become hot, then lower the flame. Keep the sealed veg biryani cooker/handi on the tawa. Keep the flame to the lowest and cook for 25-30 minutes. You can also dum cook veg biryani for the first 15 minutes on direct low flame and then for the last 10 minutes.
